Roasted Garlic Tomatoes @missdiagnosedendo
Prep time: 10 min
Cook time: 40 min
Ingredients:
- 2 pint cherry tomatoes sliced in half
- 3-4 cloves garlic minced
- 2 shallots sliced
- 1/4 cup rosemary chopped
- 2 tbsp olive or avocado oil
- 1 16 oz pint mason jar
Directions:
- Preheat oven to 450 degrees
- Spread evenly tomatoes, garlic, and shallots on a flat cookie.
- Drizzle with oil.
- Sprinkle rosemary over tomatoes and season with Himalayan salt and fresh cracked pepper.
- Roast for 40 minutes @450
Cooking tip: Make a large batch and transfer tomato mixture to a 16 oz pint mason jar. Put lid on while it’s hot and wait for it to completely cool to create a natural seal. Store tomatoes in fridge for up to a week and use for other meals such as lettuce wraps, breakfast quiches and dishes, cold and warm salads, soups, pilafs, gluten free pastas and more.
