Skip the red sauce and go for the green! The discovery of tomatillos fighting cancer has fit foodies reaching for the green sauce. A scientist by the name of Barbara Timmerman at the University of Kansas, recently discovered a set of naturally occurring phytochemical compounds called withanolides in tomatillos. The withanolides are not only antibacterial, but also a natural cancer fighter. They have halted and even dissolved aggressive cancer tumors in animal studies.
Tomatillos are also great sources of fiber, potassium, vitamin C and iron which combat fatigue and constipation.
Tomatillo Salsa by Missdiagnosed
Ingredients:
4 tomatillos
4 cloves garlic
1 jalapeño
1/2 lemon
1/4 onions
1/4 cup cilantro
Himalayan salt to taste
Directions:
- Fill a medium sized pot with water and bring to a boil.
- Add tomatillos to boiling water and cook for 10 minutes or until softened.
- Blend all ingredients in a food processor.
- Season with salt and serve.
